My Meal Planning: Templates + Grocery List + Recipes


Hi there!

After some of my friends commented that they would like a copy of my personal grocery list, I thought I would do a typical meal planning post just to help out or give some of my busy friends and family a couple of new ideas on healthy dinners.


I am also doing this (and will do some more in the future if this actually interests anyone) so that I can also use this time to search out new ideas for our own family's dinners. If I am doing this meal planning anyways, then I might as well share some of our things if it can save someone else some time on their meal planning.

I will include:
1. Meal Ideas
2. The grocery shopping list for the week
3. The recipes

I can tell you now that I spend around $150 a week. That is also including the fact that we have a toddler that I buy organic: milk, baby food jars (because she loves them still...ugh), snacks, etc. So if you are okay with spending about $100-140 a week or less if you are single...this should be good for your budget. (FYI: I do my big shops at Whole Foods as I can find all of these grocery items there and for better organic prices since the demand is higher for them there.)

Keep in mind, I will probably have a meat for only about 3-4 days of the week as we are cutting back on eating animal foods for health reasons. Calcium and protein which is popularly thought to come from only animal foods like dairy products and meats/fish, are also in plant based sources without the harmful effects like high cholesterol, for example.
Eating more plants and less animal is a very easy way to improve your health and decrease your risk, for example, of memory loss later on in life, cancer, and heart disease ---just to name a few.
Might as well get the nutrients from better sources is the way we look at it.

Okay, let's begin! You can get organized by using a free printable template if you'd like. I just started using them and they really help me go through and remember random things as they section off the parts of the store into categories.

Sunday: Quinoa Pasta + Apple Chicken Sausage/ or Meatballs with Tomato Sauce

Monday: Lettuce wraps + Asparagus-Quinoa Risotto 

Tuesday: Mini Burgers Over Tomato Slices and Topped with Avocado Cilantro Spread + Sweet Potato Fries + Side Salad

Wednesday: Taco Salad + Black Bean Tortilla Soup

Thursday: Grilled Veggies Over Jasmine Rice + Side Salad


Friday: Salmon Over Steamed Veggies + Butternut Squash Apple Soup 

Saturday: Grilled or Steamed Veggie Tacos + Tomato Cilantro Avocado Salad




Grocery List 

Approximately 31-35 items you need to buy depending on the size of your family) 
This is for a family of 2 being that some of Ava's food is not included on here

Please buy organic ingredients if available 

Keep in mind: Homemade versions of some of these things are always better but I am a mom to a toddler right now and I am lucky if I get to brush my hair some days. 
Also, some of the grocery list's items are only included in one of the days even though you will use it more than once. I did this so that you do not buy double of something and keep cost down. If you don't follow the entire list, just take a look at the recipe to get an idea of what you will need. 
All grocery items are in bold font

Sunday:

Quinoa Pasta of your choice 

 


Organic Sausage (We like Aidells Chicken&Apple for a sweet taste) Choose any kind you like - there are several:
              



Organic Pasta Sauce of your choice



 (or use your mama's homemade sauce that you have in the freezer at all times if you lucky like me!) 

Monday: 

Package of 3 Romaine Hearts

Head Cauliflower

Coconut oil or olive oil (I suggest you buy coconut oil if you do not already have it on hand because you will never want to go back once you start cooking with it!) 
                                                  

Package of Asparagus

1 Small Onion

1 bulbs of fresh Garlic

1 package of Quinoa

Himalayan salt

Vegetable stock (Pacific is the brand we buy)         
 


1 lemon

½ cup cashews


Tuesday: 

Organic, Grass-fed beef

1 (pasture-raised) egg  


2 large tomatoes 

avocado

3 limes

fresh cilantro

1 sweet potato

package of organic mixed greens

Wednesday: 

Amy's Organic Black Bean Soup  + (you will use the mixed greens, cilantro, tomato, avocado you already have from above)
                                                 


Tortilla Chips (MUST BE NON GMO as you do not want GMO Corn chips! ...and blue, organic chips are even better) 

                                                                    

Thursday: 

Lundberg Jasmine Rice 
Lundberg rice is a main staple for us


Pack of Shiitake Mushrooms       

1 Red Pepper

1 Zucchini

1 Squash 

Can of Garbanzo Beans 


Friday:

Wild Caught Salmon 

(you will already have vegetables, rice, quinoa, etc. for you to chose to pair for this night on this list)

1 Butternut squash 

Organic Coconut milk 

Organic vegetable broth 

Dried or fresh thyme

2 apples

Fresh Rosemary 


Saturday: 

Blue, Organic (Whole Foods 365 brand) Taco Corn Shells 
Blue corn has more natural antioxidants and costs the same. Deal! 
                                                           

Salsa 

Can of black beans

(you will have the remaining ingredients already on this list)





Recipes: 

Sunday: Self explanatory...Boil pasta and heat up sauce and sausages
(Most of the organic sausages are precooked so they just need to heat in your tomato sauce. 

Monday: 
Asparagus Lemon Risotto Recipe Found Here
We did not add the parsley for a garnish, curry powder, or the sour cream since we barely eat dairy products. 

Take the Asparagus Lemon Risotto and fill Romaine Leaves. 



Tuesday:


-Mix the package of ground beef (about 1 lb.)  with 1 egg 
-Season with Himalayan salt + your other favorite seasonings 
-Form into small patties and cook them stove top on coconut oil (or grill if you are up for it) 

-Peel and slice sweet potato into fry size slices - season with Himalayan salt / cajun seasonings/ whatever - and bake 450 degrees for about 25-30min 
-Slice up a large tomato serve your mini burgers on top of them 
-Top Mini Burgers with Avocado sauce (blend together 1/2 large avocado, small handful of fresh cilantro, lime juice) 

Wednesday:

Prepare a salad with your: mixed greens, fresh cilantro, tomato, avocado, some black beans, blue corn tortilla chips, salsa, lime 

and heat up your Amy's black bean soup as a side 

Thursday:

-Boil Jasmine Rise
-Top with sautéed (in coconut oil) or grilled vegetables of your choice: Peppers, mushrooms, zucchini, squash, etc.

-Prep a side salad

Friday:

Start Butternut Squash Apple Soup: (Found on this blog post)


1. Cut and scoop out seeds of butternut squash then cut into big pieces to steam in large pan with 1/2 cup water. 

2. Sauté (low to medium heat) 6 garlic cloves in Olive oil 

3. Add in ingredients below to top two cooked ingredients: (all into blender) 

•1/2 cup coconut milk
•2 cups vegetable broth 
•Few dashes of thyme (fresh if you have it) 
•2 chopped up apples 
•Sprig or two of fresh Rosemary 
•Few dashes of Himalayan salt 
and 
•Pepper(optional) 


4. Blend on High for 7 min. 
(If you aren't working with a Vitamix, heat in sauce pan afterwards.
If you are using a Vitamix, then the soup will already be heated after the 7 min blending process.) 

Prep the salmon 

-Season the Wild Salmon cook stove top in coconut oil or olive oil if not on high heat (as olive oil becomes toxic when heated at HIGH heat)

-Place salmon over a bed of Quinoa, veggies, left over Asparagus Lemon Risotto, or left over Jasmine Rice. Get creative :)

Saturday:

-Cook veggies stovetop or grill (peppers, mushrooms, zucchini, squash, etc.)
-Heat up left over rice, quinoa, beans
-Chop up some cilantro and tomato



-Fill taco shells with all of the above
-Top taco filling with a avocado dressing (blended avocado, lime, cilantro) and/ or salsa
-Pair with a side salad: mixed greens, tomato, cilantro, avocado, etc. and some left over left over Butternut Apple Squash Soup if you have any. 


Hope that helps! If I don't hear any feedback then I will assume no one will be using this and probably not do it anymore since it took me about 3 hours.

Our Weekend

Morning! Hope everyone had a nice weekend. Here is a little overview of how we spent ours: 

Saturday morning
Pompano Beach Playground over by Galuppi's in Pompano Beach 

Ava basically wanted to play with a little boy's basketball the entire time...
and stare at balloon boy the remainder of the time. He was very nice to her and entertained her for a while with this balloon blowing skills. 
I studied for my holistic health coaching certification by the pool during the afternoon
When I was done with my week's class module, I invited my mom to a mother daughter dinner date that night.  



If you have not been to Market 17 in Ft. Lauderdale, I highly recommend it! It's a farm to table restaurant and even lists all if the local farms who are their suppliers. It's as organic as it gets. The only downside was when our coffee came out, they served Splenda and Sweet&low... What?! That's super dangerous stuff, all GMO, and linked to cancer, infertility, and lots more.  Gross. 
I already emailed them and let them now and also recommended they replace those with raw honey, stevia, or agave...or just real sugar! Anything is better than that artificial poison. 
Other than that, it was an amazing place full of delicious organic food!!!!

Sunday:

Mark brought home a play kitchen for Ava after church. She LOVES IT ! 
Mark prepping our lunch and Ava prepping hers too. 
Mark and I later went to Tortuga Music Fest on Ft. Lauderdale beach and had a great time.
Can't beat great music on my favorite beach! :) 

Found our goofball friend, Zach, there!  For those who may be wondering what Zach asked me... No, Mark and I are not perfect ALL the time with our eating or drinking. We control what we can, and that is the food in our home. I am clearly drinking a "classy" corona tallboy in the photo below. I later had a "Naked Coconut" which was rum, coconut water, and lime. I didn't want any soda with the high fructose corn syrup, ect. so I tried picking the better of the options they had there. (Which was quite tasty I might add! I would have never thought to use my coconut water as a drink mixer! Thanks, Tortuga!) 

You can only do your best sometimes with what you have at hand...:) 
We found Ashleigh too! Love her :) 
Mark and I had a great time at Tortuga Music Festival with his tickets that he won on the Paul&Young Ron show.

Thank you, mom, for playing with Ava while we were out at the beach.  Ava loves her time with her Nonna. 

This week should be pretty low key for us. I have made it my goal to tackle one little section of our home to declutter and organize each day. Today is the laundry room shelves. Exciting huh?! haha ( I also want to bring back drinking my daily warm lemon water with cayenne  too! I have been slacking on that and I don't know why because I love how I feel when it is in my routine.) 

Next week, we have Mark's dad and step mom flying in from Oregon! I am so excited. I love when they are in town.

Happy Friday + EASY&Healthy Breakfast Recipe

Yesterday, after I was at Amanda's place (for the "fit&fab" basket) and the park with Ava...

My friend, Jessica, walked over with her 3 month old son, Christian, to visit Ava and I. She brought me her usual breakfast that she makes for herself and her fiancé. Such a sweet surprise!

She makes two Mason jars of this the night before and then all he has to do it grab it out of the fridge  on the way out to work.  I was so excited for the next day to try this...
I got to spend some time with her sweet little boy. Love this chunky monkey. He is the cutest. 

I made these green smoothies while she was here... 

So this morning I was so excited for my oatmeal!
Jessica, if you're reading this... It was was DELICIOUS. I'm not just saying that either. I ate it so slowly that it wouldn't end. I am really full too because it was a lot in there. (And Ava wanted some too) 

The recipe for those who would like to try this super easy, healthy way to have an awesome breakfast: 

Add
•1 cup organic rolled oats to 1 tbsp of organic chia seeds...stir together.

•Add 1 tbsp of organic honey and 1 cup of organic almond milk..... stir again to get the honey throughout the mixture. 

Waa-laa! You're done!!! 

Put the top on your mason jar and it goes into the fridge until tomorrow morning's breakfast! 

(They sell mason jars at Publix too just in case you don't want to head to Michael's or Hobby Lobby.) 


(Also, try to get the "365 Whole Foods Brand" for Almond Milk if you aren't making your own so that you avoid the Carrageenan.... I know, I know... what is Carrageenan and why do I have to worry about that if I am buying organic?! Trust me, I feel the same way.
Here are some other better brands that don't use Carrageenan below:

  • Silk PureAlmond (including chocolate-flavored)

Toppings the next morning if you want any :
bananas, mini semi sweet chocolate chips, vegan chocolate chips, berries, or it is great all by itself!

I added in 1/2 a banana and a few mini semi sweet chocolate chips... It was DELICIOUS!!!!!! 

I warmed mine up but Jess eats hers cold. Both are delish!
(Ah! ^ me in the morning but very excited for my new breakfast. Picture I sent to Jess. Haha )
I'm going to start making these for Mark since he likes eating oatmeal in the mornings. That way he can do what Jess's fiancé does and just grabs it on his way out for work.

Oh, last night, I made these guys... 
Not organic but they are non GMO which is much better than the alternatives out there. I wanted to surprise Mark since he is such a good sport with being open minded and eating all the healthy food that I give him. 
I have had their chocolate chip cookies before...very good as well! 
They also make sugar cookies. (Publix and Whole Foods sells these) 


And before the delicious oatmeal made me happy.... Well, we got off to a rocky start as I walked into Ava's room this morning to her like this: 
BUTT NAKED

If you know anything about babies, you can imagine that I was not thrilled about this. 

After that all happened, we ate that delicious breakfast above (Ava loved it too) and headed out for a run. 

Post run green smoothie was super green today. As you can tell, I love that neon green color as I typically don't do selfies WITH my smoothies haha. 

Cheers to FRIDAY!!! 

Also, my husband won 2 tickets to Tortuga Music Fest on the local radio show down here this morning! I was so excited when he told me because I was about to go online today and buy those as I didn't realize it was already this weekend. I'm hoping my mom can stay with Ava for a while on Sunday so that he and I can head down there and have a fun beach day with great entertainment.

Later today, my friend (and neighbor) Jessica will probably come over again with little Christian. I love that I have a close by mom friend that is like-minded and is enjoying learning how to be a healthier person like me. Love her so much and happy that she and I can watch our kiddos grow up together as I've known her now for about 13 years.

Yesterday&Today + My EASY Apple Butternut Squash Soup

Thought I'd add in some of my Instagram pictures...
Yesterday we were home all day. I cleaned, did laundry, and cooked. 

During a break:
Here is Ava wanting MY snack as she comes over saying, "ack? ack?" Which means I want a snack. So I ended up with one slice and she with the other that I cut up into pieces. 
Always wants mama's food... :)
(Ezekiel bread toasted with almond butter and raspberry jam...a fave around here) 
I am kind of hooked on making meals or snacks with romain leaves. It's nice fresh tasting change to the usual shell. Plus it's another green I can add in easily :)

These are just filled with guacamole, salsa, cilantro, cherry tomatoes, mushrooms, chia seeds, and Himalayan salt. 

Anyone else put chia seeds in their daily water ?

I do this as another way to get calcium, protein, magnesium, fiber, omega3, omega6, and iron in to my diet. It's a very easy and natural way to get a lot of health benefits into your daily diet.

I put chia seeds in Ava's yogurt for her too.  Chia seeds are a great addition to toddler and kids diets too! 

Great motto, huh? That's how I look at eating now. It's not about limiting and "not being allowed" to eat unhealthy foods. It's that I fill up on good stuff so that I'm not craving sugar and salt throughout the day. Crowding out... Genius! This little motto works in many aspects of life... People, work, experiences, attitudes, hobbies. Fill up your day with as much good as possible and you won't have enough time for the bad things, experiences, or negative people! aha!

And this...
Ava wanted this balloon while we were food shopping that morning. I thought it would be a good way to say Thank You to Mark when I saw her reaching for it. 

I helped her a bit so that she knew what to do with a crayon...
He loved it :)

Then today, I delivered the "Fit&Fabulous" themed basket. My Mommy&Me's class at Amanda's Place was given the task of trying to collect class donations to create an auction item for the program. 
With the help of the moms in our class, we raised about $100 cash and added about another $100 worth of goodies they donated. 
The remaining donated items were thanks to my amazing friends! We ended up having a basket totaling $1,160.00 !!!
We topped our $100 goal and that makes me very happy. I hope the program can raise a lot of money with this basket for Amanda's Place.
It was so much fun for me to coordinate and be involved with the program's fundraiser.

After the basket making, I picked up Ava from her Nana's house (Mark's mom). 
We headed over to Bayview Park in Ft. Lauderdale to meet up with Ava's friend Mya of our favorite and healthy place: Myapapaya | juicery + kitchen

Thought I'd let her burn off some energy and get some vitamin D :) 

Oh! And last night I made a pretty tasty soup if I may say so myself! (Prep&Blending took about 25total time - easy!) 

Here is what I did:
